Si hablamos de vendimias en general, 2025 fue un año pésimo. Dos veces pesé la uva esperando haberme equivocado en la primera pesada, pero el resultado fue exactamente el mismo: en total, 453 kilos de Listán Negro y 113 kilos de Listán Blanco.
En mi mente había repasado previamente una y otra vez la futura cosecha, y ya me veía haciendo, dentro de mis modestas posibilidades de pequeño elaborador, unas cantidades decentes de aquel o de este otro vino. Siempre me sucede que tiendo a ser mucho más optimista que lo que la cruda y dura realidad finalmente dicta.
Lo tenía todo listo desde hacía semanas para hacer dos vinos tintos, un vino rosado, un vino naranja y tres vinos ancestrales, pero tras la segunda pesada, no pude más que verificar que, efectivamente, solo tenía uva para hacer apenas una pequeña cantidad de vino tinto y una aún más pequeña cantidad de vino naranja. Así las cosas, en el último momento me aventuré a tomar la decisión de separar 130 kilos de uva tinta para hacer, además, una pequeña cantidad de vino rosado, justo unos segundos antes de que estos acabasen también en la despalilladora que rápidamente se iba tragando el listán negro que acabaría por convertirse, tiempo después, en mi único, y escaso también, vino tinto del año 2025.
De aquella decisión tomada en el último instante y otras vicisitudes de las que no hablaré hoy, de aquella particular gestión de lo siempre incierto, nacieron finalmente estas 63 botellas de Principio de Incertidumbre: Cariño.

If we are talking about harvests in general, 2025 was a dreadful year. I weighed the grapes twice, hoping I had made a mistake the first time, but the result was exactly the same: 453 kilos of Listán Negro and 113 kilos of Listan Blanco in total.
In my mind I had gone over the coming harvest again and again, already picturing myself making, within the modest means of a small producer, decent quantities of this wine or that one. It always happens to me: I tend to be far more optimistic than what the harsh reality of things ultimately dictates.
I had everything ready for weeks to make two red wines, a rosé, an orange wine and three ancestral wines, but after the second weighing I had no choice but to confirm what I already suspected: I only had enough grapes for a small quantity of red and an even smaller quantity of orange wine. So, at the last moment, I made the decision to set aside 130 kilos of red grapes to make a small quantity of rosé as well, just seconds before they too would have disappeared into the destemmer rapidly swallowing the Listan Negro that would eventually become, some time later, my only, and equally scarce, red wine of 2025.
From that decision made at the last instant, and other vicissitudes I Will not speak of today, from that particular management of what is always uncertain, these 63 bottles of Principio de Incertidumbre: Cariño were finally born.
